Mole Flavored Beer

Collaboration Beer

8.3% ABV, 25 IBU   
This year’s brew is our tribute to the mystery and variety of Mexico’s most famous cuisine—mole. Combining ingredients from several traditional recipes, we have concocted a beer that reflects the subtle harmony of flavors in a unique way. Raisins, whole spices (cinnamon, cumin), piloncillo sugar, dried chiles (guajillo, arbol, ancho), roasted almonds and pumpkin seeds all combine with deep chocolate overtones to create a complex brew reflecting our love for this Mexican dish.

Awful Prank Ends Up Being Pretty Wonderful


"When Whitney Kropp—a Michigan high school student—was nominated by her fellow students to be homecoming queen, it was sort of a shock to her, because Whitney had never considered herself particularly popular. But then it was revealed that the prank was some sort of awful, Carrie-esque joke. The boy who'd been selected as king even withdrew, making her a laughingstock. She was crushed, until word of the prank got out and the whole town threw their support behind Whitney, donating her a dress, shoes, a full makeover, dinner and a photoshoot. All the positive attention prompted her to post a Facebook status that said: "Going to homecoming to show them that I'm not a joke. Im [sic] a beautiful person and you shouldn't mess with me!" The whole town turned out to see her crowned queen, and she told reporters,"I’m so happy – this is so much right now for me" ...

High Class/ Working Class Contrast of Food

We always have heard of America being a melting pot, but it's usually been a fruit salad.  As generations become more liberal and the sensorium of ideas have been heightened, new concepts have been created.  In the old days our parents would go to restaurants that had 1 identity such as Chinese, Italian, or Indian.  They would drink wines from one grape.  It's interesting that at that period of time things were more separate, but now things are fused.  Art has combined, but also many artists play around with the concept of contrasting "class".  Hotdogs can definitely be considered the food of the working class and champagne the drink of the elite.  What happens when you match them together in a non-pretentious way.

NOMA Veterans Serve Up Hot Dogs and Champagne at New London Eatery Bubbledogs

Photographer Erik Wåhlström explores the aesthetic dimensions of wieners in this series of stills taken at Bubbledogs, the first-ever restaurant to specialize in the high-low mix of champagne and hot dogs. The brainchild of husband-and-wife team James Knappett and Sandia Chang, Bubbledogs is a daring step away from the culinary couple’s fancy food background. Having met while working at Thomas Keller’s three Michelin-starred Per Se in New York, the pair subsequently did stints atNoma and The Berkeley, with Knappett in the kitchen and Chang managing the front of house. “It’s just always this thing that’s been in the back of my mind,” says Chang of the buns and bubbly combo. “James gave me this little hotdog necklace charm, and later I got a small champagne bottle, and that’s when I first thought, hey, these go really well together.” Generally considered the go-to American ballpark snack, Bubbledogs’ take on the frankfurter is decidedly more gourmet. Current options on the menu include the BLT dog, wrapped in bacon and served with truffle mayo and caramelized lettuce, and the Jose dog with guacamole, sour cream, salsa and jalapenos. The menu will be complimented by a wine list that includes an extensive list of champagnes and sparkling wines from small, lesser-known producers. “It was really about creating something unpretentious and delicious,” says Knappett, “a place that is slightly unexpected and a little different––and nothing is less pretentious than a hotdog.”

Mexican in Berlin

Texas is known for having some of the best Mexican restaurants in the world.  It's always odd when I go outside the south and go to Mexican restaurants.  These places are usually very expensive and it is quite silly because Mexican food is the quintessential working class food.  Anyways I love when my homegrown favorite food is discovered and savored outside the United States as is the case of Chaparro a Mexican food restaurant in Berlin.  http://www.exberliner.com/reviews/chaparro-burning-for-burritos
Garrett Oliver is one of the hippest and coolest Brewmasters in America. I have personally met Garrett and his knowledge of beer food and cocktails is absolutely outstanding. Check out this video from Garrett's Brooklyn Brewery.
